don't add any additional garlic or it'll become too strong. add a little bit of extra salt and definitely some acid => vinegar lemon juice … that is why you were tasting only oil because there was no acid to balance the flavour

Dont use olive oil, your "Aioli" gonna taste crappy. use neutral oil like raps, soy, canola , etc

If you want to use olive oil make the the Catalan version, morter gralic to a paste then add lemon juice and add olive oil.

I love this recipe! I use grapeseed oil, instead of olive oil, for the lighter oil taste, and then at the very end, I add three tablespoons of sriracha sauce to make sriracha aioli for burgers, or pretty much anything. It's a huge hit with my family! Thank you, Chef John!

Why not just blitz the egg yolks and garlic together and then drop the oil in while it's blending work smart not hard

Ya.. So now it turns out, I can never buy Mayo again… ever.
I just made this using a stick blender, no garlic smash-chop or whisking needed.  I only burned 3 calories making it.

Holy BLT Batman!  Just when you thought bacon couldn't get any better.  POW!

Great recipe! I just used half canola and half olive oil because all olive oil was a bit too bitter for me. The other problem is that I eat this one day, and then I forget about it. Oh well.

I made this today and made the garlic bread from an other video of you with it and it was delicious, but unfortunately after I put it in the fridge my aioli became very runny and tastes very oily, is there any way to fix that?

I made this and it has a terrible after taste. Almost too oily. I'm sure I messed up and the recipe is delicious. Can anyone give me any pointers as to what I may have done wrong to get such a bitter aftertaste?

Dear Chef, do you believe after making the mashed garlic preparation, mixing all of the ingredients in a food processor, make an inferior Aioli? Just wondering.
