Hi, Chef John! First off, I want to thank you for all your video recipes and everything you do! I love your cooking style! But most of all, I love how real you are!
Secondly, can I make a special request- could you please do a video teaching us how to make chicken pot pie (if you haven't already done one, that is)? I know I could easily google it and find a million different recipes for chicken pot pie, but I think yours would be the best of them all. Besides, who else would find a way of adding cayenne pepper to his or her chicken pie and get away with it, right?! Thanks a bunch!

omg?? I cannot believe I just made this. Like I seriously don't cook, but it worked Perfectly! The hardest part was translating the ingredients (I live in Australia, so the name of our ingredients here are completely different. I've never heard of all purpose flour) But It worked and was the flakiest, softest, golden but with a crunch pastry!! Thank u

This recipe worked out great! I finally made a beautiful and tasty crust after many failures in the past! I think what I've been doing wrong the whole time is not incorporating the butter and flour just right. From my experience, if you UNDER-incorporate it, the flour is too dry which requires a lot more liquid turning the pie crust tough and leathery. On the other hand, if you OVER-incorporate it, it turns into a paste which only requires very little liquid, making the pie crust structure very weak and crumbly, and would just fall apart.

Do pie crusts need to be baked first? I hate a dark or hard crust…..not that I bake, but everyone tells me I need to bake the crust first. I want to make a pumpkin pie but am worried about a soggy crust? Any suggestions?

Can you taste the vinegar after it's cooked? I was reading the book "The Science of Good Cooking" from America's Test Kitchen, and instead of vinegar, they used a mixture of half water and half vodka. The premise was that gluten cannot develop in the presence of alcohol, and as a result, the dough was a bit softer and easier to roll, but would cook extremely flaky. Have you tried vodka for the dough?

So I made a pie last night. Guinness braised beef cheek and then a layer of cauliflower in blue cheese and nutmeg bechamel. My food muse is out of control and I blame you entirely. Just so you know. And yeah, it was good. Dear god…

I just came from the Key Lime Pie/How to crimp pie crust video, why on earth are the comments disabled? I can only imagine the ugly arguments about pie crust crimping

what went wrong with my dough? It was crumbly and actually no difference before and after the oven (maybe a little dryer). Anyone got a tip for me?
