Be warned: 1) people questioning the use of canned San Marzano tomatoes absolutely do not know what they're talking about. I encourage you to seek out authorities on Italian food, in the form of different chefs and books, and not bother arguing me your useless opinion on YouTube, because I already know that no one reputable agrees with you, and 2) This is far from a basic Italian tomato sauce recipe, and really is a much more Italian-American tomato sauce. The inclusion of onion makes this more of a Marinara sauce, but that doesn't typically contain celery or any of the other herbs and spices included here, with the exception of basil. Your basic, quintessential salsa di pomodoro contains tomatoes, garlic, oil, basil, pinch of sugar, and salt, and that's really it. It is, however, a nice touch to use anchovies as your salt, though, as they give nice subtle depth and complexity. Using anchovy fillets, you can simply mince them up, then stir/crush/smear them a bit to "dissolve" them in your hot oil and, like the good chef says, nobody has to know they're in there. (The Silver Spoon does also have a "quick" tomato sauce (salsa di pomodoro veloce) made using fresh plum tomatoes, which are blanched, diced, and cooked in oil with garlic and a parsley sprig, which are both removed before serving the sauce over pasta. It also specifically says not to add Parmesan cheese to that).

I've finally found a tomato sauce I actually like! Initially I made this exactly as the recipe instructs. Upon tasting I added about another teaspoon of salt (I probably went too light early in the process), a pinch more red pepper flake, and a pinch more Italian herbs. I wasn't sure how much water to add so I slowly added about 1/4 a cup while it was simmering — the thickness seemed fine. Oh I lied — I added a bit more anchovy paste and one extra clove of garlic to the base. Anyways, it was awesome and my picky eaters loved it!

I can't mix things with my hands because I have hairy knuckles. I don't have chest hair, but my fingers have chest hair.

I didn't use any metal utensils but my pan is metal. And the bowl I used to crush the tomatoes is metal. And I didn't have any anchovy paste so I substituted shards of metal. I hope it turns out.

I have just made and sampled this basic recipe I used white onion with cheap basic's crushed tomatoes, using a slow cooker on a high setting for 2hrs and after giving the occasional stir , removed the onion and with a stick blender I blitzed the sauce down, WOW! I salute you sir for bringing this to a wider audience, no more cook in sauce jars for me.
