    You should never cook red kidney beans in a slow cooker or pressure cooker.

    They contain phytohaemagglutinin that is common in beans but especially in red kidney beans. They can poison you if you don't cook them properly. Soak them for at least 5 hours and boil them for at least 30 minutes to completely destroy the toxin.

    Dry aging a trimmed piece of steak in your home fridge is just asking for trouble. I hope no one gets seriously ill from this shite advice.

    Heston's "Chili" is an abomination. He neglects key elements of this dish. And an authentic chili recipe certainly wouldn't include beans. But… at least he doesn't cook the beans along with the meat which would further his chili heresy. I'm sure his approach is delicious but it is NOT chili con carne. You'll fail to arrive at your chili destination by just using cumin, paprika and cayenne. Ancho and Guajillo peppers are absolutely essential and cannot be substituted along with other important ingredients.

    Suet pastry. Maybe if I found a butcher who does his own slaughtering I could get fresh or frozen suet here in Florida… possibly in north Florida. Normally it can't be had for love or money anywhere I've lived in the USA.

    I'm no chef but I do know teflon burns. If you are gonna do this I would do it in cast iron but personally I like the grill the best.

    I love this episode. I follow Heston's advice to A. Use a VERY hot pan to put the steak into B. Turn frequently and C. Leave to rest. Since watching this programme, I have made GORGEOUS steaks EVERY TIME. Heston is a professional chef who is interested in what and how to cook foods. Why do so many people who have far less skill, experience or interest simply moan and criticise. Many posters are complaining that he doesn't make Chili Con Carne in a ' traditional' way. Who cares? He has helped me cook a 'perfect' steak. All you need is a VERY hot pan, a little salt, some resting time and a steak. (I have found that his advice is so good it even makes slightly less good cuts of steak taste great.) His tips for cooking steak alone are invaluable but all his programmes are entertaining too. Of course many of his techniques do require a lot of time, effort and equipment BUT he has shown time and again in this series what all top quality chefs know which is that if you use decent quality ingredients and know how to prepare them and use some basic (but fundamental) skills , anyone can make beautiful tasting food that is 'restuarant' quality. 🙂 5 Stars, Heston!

    The problem with Heston is, those glasses. Its just screaming; Hi, I am intentiosly trying to be interesting. His food doesnt need that.

    This meat resting thing in the fridge. So the air circulates drying out the steak, why would drying out the stake making it more juicer :S?

    Kinda frustrating to hear a food "scientist" saying that his fat friend is an hydraulic press. Hydraulic press is not that at all, im not trying to separate apples and pears but apples and raspberries, a hydralic press uses the sizedifference in liquids to force a pressure as a pressure of a liquid depends on the area so you can use a small input to get a large output force etc.
