    Chef John, I hope I find you doing well. I just made these and they are the greatest thing to ever exist on this beautiful earth (besides Jesus of course). I also made homemade caramel sauce and topped it off and oh mah gawsh I cannot describe it.

    Question: What is the most important flavor component in pancakes? Answer: The surface that is baked in the oil against the pan. That is why I make crepes (browned to about the same level as the pancakes here) instead. The flavorful surface is maximized in ratio to the volume. The batter is really about the same (except I prefer more egg, and baking powder is not necessary) only slightly thinner, to make thinner (and larger) crepes. Once you try those, with maybe strawberry jam and/or sugar on top, rolled, you'll never go back to these thick pancakes!
    The basic crepe batter is: 2 eggs, 2 dl flour, 4 dl milk, some melted butter/margarine (half a dl will do), pinch of salt. Importantly, mix flour with milk first and let sit for half an hour before mixing the rest and baking.

    The pancakes here look like how I want them, but recipe they are too thick/fluffy. I like my 'cakes thin and chewy, any recommendations?

    Follow the recipe, omit the salt, add a small can of creamed corn. Mix everything up gently and cook on medium-high. They come out fantastic with this really nice sweet hint of corn and the little corn pieces add a really nice texture. The only catch is you have to use the batter right away. I think it's because of the sugars that are in the corn activate everything. if you don't use it within 20 minutes or so the batter becomes super watery

    Pancakes are ace food, one of the best, (favourite is Sugar and Lemon)
    Asking a question, do you think it's ok to tell people to fuck off (on here) and to call people little bitch on here.
    Because I don't think that's on, what are your thoughts on it, because Living Free seems to think it's ok to call people little bitch, I suppose that must make Living Free a bitch to call people bitches on here.
